"Kinkaku" is made of Gyokuro tea leaves, based on the traditional technique of the famous Japanese tea producing area of Yamashiro in Kyoto, the Gyokuro's bushes were almost completely covered to avoid direct sunlight before harvest.
"Kinkaku" means " the symbol of Kyoto, "Kinkakuji-temple". (Golden Pavilion)
The sommelier of Fukujuen elaborated this tea to find the authentic flavor of the Edo period.
This process results in that Kinkaku has a unique flavor and a good taste called umami.
