Its taste is interesting because it possesses both the depth and softness of the gyokuro associated with the astringency of the sencha.

When you prepare it if you infuse this tea with water not too boiling you will have a flavor that will be close to gyokuro, but if you put boiling water you will rather have sencha. It is pleasant to be able to choose how you want to taste your tea.

This specificity comes from the production process. Indeed the kabusecha just as the gyokuro will be protected from the rays of the sun with a black net. However it is distinguished by the fact that it is covered about 1 week before its harvest, therefore less time.

Each producer of tea to its own way of production according to the desired flavor. The coverage time can be longer or shorter and the filtering rate of brightness is more or less important.

You will get a different tea that will be closer to gyyokuro or high quality sweet sencha.
